Sometimes you want to add a little extra something to your coffee but don’t have all the ingredients on hand. Coffee syrups are one thing that are easy to make from scratch and you often have everything that you need without a trip to the store.
Here’s a simple vanilla syrup that can be great to have on hand as it is used in so many coffee recipes, often for sweetness as much as for the vanilla flavor.

1 c. water
1 c. sugar
1 vanilla bean, split open lengthwise
vanilla extract (optional, to boost vanilla flavor)
Directions
- In a small saucepan, combine sugar and water.
- Split the vanilla bean lengthwise. Scrape the seeds into the sugar water and then place the whole bean pod in the solution as well.
- Bring the sugar solution to a simmer over medium-high heat. Once simmering, reduce heat a little so that you maintain a gentle simmer. Simmer for 10-15 minutes.
- Remove from heat and let cool to room temperature. Leave the bean pod in the solution while it cools.
- Once cooled, removed the bean pod. If desired, add 1/4 to 1/2 tsp. vanilla extract and stir in if you want to boost the vanilla flavor.
- Transfer to a clean jar or bottle and store in the fridge for up to 2 weeks.
Notes
- If you don’t have a vanilla bean, you can just stir in vanilla extract after the syrup has cooled. Use 2-3 tsp. of extract depending on how strong you want your vanilla flavor to be.
