The frappe has to be my favorite cold coffee drink (outside of black cold brew of course). It’s more like dessert than a drink, and for me is a great mid-afternoon pick me up that doesn’t interfere with my sleep at night.
While I am a sucker for mocha frappes, one of the most popular flavors of frappe is caramel. I have been experimenting with caramel frappes lately and they are quickly becoming part of my regular rotation. Here’s how I make it:

minutesIngredients
Ice
1/2 c. cold brew coffee
1/2 c. milk
1 tsp. chocolate syrup (optional)
2 Tbsp. caramel syrup
1/2 tsp. xanthan gum (optional)
Whipped cream (optional, for topping)
Directions
- Place ice in a blender or blender cup.
- Add coffee, milk, and syrups.
- Blend well until a milkshake consistency.
- Top with a dollop of whip cream and a drizzle of caramel sauce (optional).
Notes
- Newer blenders do a great job crushing full ice cubes, but if your blender is a little older, using crushed ice will help, giving your blender a little head start!
- Xanthan gum is a polysaccharide that serves as a thickener and stabilizer and well help your frappes get that coffee stand consistency and will help it not to separate.
You can customize this recipe by using different types of milk (like almond or oat milk for a dairy-free version) or by adding a scoop of vanilla ice cream for an extra creamy texture. Use any of these in place of the milk in the recipe above.
